Cured overnight, dressed table-side with cold-pressed olive oil from our own grove rows. Paired with a Tasmanian riesling.
Hand-cut pasta, bisque emulsion, sea herbs gathered along the Mornington coast that morning.
Dry-aged 45 days in our own room, finished over ironbark. The sommelier pours a Barossa shiraz to match.

All QuestionsThe main floor is open to the public; the VIP salons and private rooms are reserved for members and in-house guests. Registration at the entry desk takes under five minutes with photo ID.
Check-in from 15:00, check-out until 11:00. Suite guests may request a 13:00 late check-out at no charge, subject to availability.
Smart casual on the main floor — no singlets or flip-flops after 18:00. The VIP salons ask for jacket-level dress; sportswear is not permitted.
Yes — chauffeured cars from Melbourne Airport run on request, and our rooftop helipad accepts arrivals with 24-hour notice. Book through the concierge team.
